KITA Designs a Green Market on Campus
Elise Vandansik, a University student from Holland is dedicating her six-month internship to developing a green market on campus. On the West corner of campus, a large concrete market is currently being constructed. This market will soon sell organic produce grown by KITA students as well as farmers in the area who have committed to converting some of their land to organic vegetable production. Elise has a dedicated team of two students who are working with her to design the gardens on campus that will grow food for the green market. She is also working with the Level 100 Vegetable Crop Production class to create continuously-producing garden beds that will grow a variety of vegetables including but not limited to: tomatoes, spring onions, cabbage, sweet pepper, hot pepper, orko, garden eggs, lettuce and carrots. Once open, students will be selling and marketing the produce themselves while learning about business, sales, marketing, food storage, customer service and displays.
